VEGAN BLUEBERRY CAKE

Happy Tuesday. I have been on this blueberry thing lately and here is another budget friendly recipe that you can easily make in no time. I am a huge fan of quick and easy. If you are a busy mom and need easy, healthy and simple recipes, you are in the right place.

This was so super easy. I actually made a peach and blueberry type cobbler months ago, but I woke up one morning and decided to try to do pretty much the same thing, but using blueberries only. Guess what? It was a hit! My kids loved it and it was not very sweet, but offered a great taste.

Details:

  • 2 cups self rising flour
  • 3/4 cup plant based milk
  • 1/4 cup maple syrup
  • fresh lemon (squeeze)
  • 1 cup frozen blueberries

In a bowl, mix flour and milk. In baking pan, add blueberries, lemon and maple syrup. Then pour batter mixture on top and spread. Bake at 350 degrees for about 20 minutes. Enjoy!

Remember eating healthier does not have to be boring, but just take simple ingredients and you can create something healthy and delicious.
