Tasty Tuesday Tip (Turkey Bean Soup)

Hey Everyone!! Today this will of course another quick and easy meal idea. I like to come up with easy lunches and soups that take minutes to prepare!! No recipe needed..just need 5 ingredients!! Remember that eating healthy can be simple and budget friendly. If you are a mom in need of quick meals…Try this one out. As mothers we are busy, but there is room to get in the kitchen and cook at least every now and then..lol. let’s get to this recipe:

Ingredients:

1/2 lb ground turkey

1 cup mild salsa

1 cup chicken broth

1cup or more of raw spinach

1 drained can of northern beans

Instructions:

In a medium saucepan add a little olive oil. Maybe 1 tbsp. Next add ground turkey and cook until brown. Add garlic powder, lite salt, pepper and cumin. Next add beans…salsa…and broth and bring to a slight boil for 7-8 minutes. Add raw spinach..simmer for a minute and turn heat and serve!!

Enjoy this tasty soup. No fuss is a must!!!

Tasty , Tuesday, Tip(Cheerio Peanut Butter & Honey Bars)

Hey Everybody! I wanted to share this quick and easy snack idea. I made this before but decided to make it again. Your kids would probably love them and so would you. Getting healthy snacks can be difficult at times for some, but you can make these in literally minutes! Contains fiber & protein so it should keep you satisfied.

***For the bars you see in the picture above I used 1 cup of plain cheerios, 1/2 cup of honey and 1 cup of crunchy peanut butter!!!

Tasty, Tuesday, Tip (Pasta Skillet Dinner)

Hey Everybody! Today I am coming to you with a skillet dinner that is very easy to prepare! If you buy those frozen skillet meals……I would recommend that you make it yourself, it will taste much better and is healthier. If you are familiar with my Tasty Tuesday Tip blog, you know I always try to find ways to increase vegetables in my recipes, but at the same time offer quick and easy meals that can be made even if you are busy! This is another recipe that you can be very creative with by adding different vegetables. Remember eating healthier doesn’t have to be hard, just change what you already eat by adding or taking away a few ingredients. As we all know, pasta is very inexpensive so if you are on a budget, try a pasta dish as your base and build from there. Let’s get to the recipe:

Ingredients:

  • 2 fresh chicken breast
  • 1/2 box rotini garden pasta
  • 1 can cream of mushroom soup
  • 1/2 c water
  • Parmesan cheese
  • 1/2 c zucchini (diced)
  • 1/2 c yellow squash (diced)
  • 12 oz frozen broccoli florets
  • pepper
  • garlic salt/powder

Instructions:

Prepare pasta as directed. In the meantime, dice a yellow squash and zucchini and set to the side. Place frozen broccoli in microwave and heat for about 5-6 minutes and set to sided. In a skillet, add 1 tbsp olive oil and season chicken breast and cook until done. Once chicken is done, shred chicken with hand and place back into skillet. Take drained pasta and add to chicken in skillet and then add veggies(broccoli, squash, zucchini). In a small saucepan, open one can of cream of mushroom and about 1/2 c of water and stir occasionally. Then add cream of chicken mix to skillet and stir until well blended. Add seasoning as needed per taste. Top with Parmesan cheese and enjoy!

Tasty, Tuesday, Tip (Blue Corn Chips & Ground Chicken,Veggies, Salsa)

Hey Everybody! How are you doing? If you follow my blog you know that I always try to prepare quick and easy meals that doesn’t require lots of work in the kitchen. Being now that I am 8 months pregnant and have a 6 and 3 year old, you can imagine!!! I still try to prepare healthy meals when I can. This particular meal is what I made the other day for lunch. I had some left over ground chicken (uncooked) that was previously used for ground chicken burgers in the refrigerator and decided to whip up something quick for lunch time. It can be time consuming at times and feel overwhelming when you are trying to plan meals ahead of time, but it can be done. Everyday is not the same, but there are times when I can easily whip something up just looking at what I have in my kitchen!!!! 

In this particular Tasty Tuesday Tip, you will see that I used Blue Corn Chips!!! My husband bought some organic blue corn chips one day and they were not bad and I decided to try them out again, but I think I got a different brand than he did because the taste was slightly different, but they do contain about 2g of fiber per serving. You can go to your local store and give them a try. I usually keep salsa on hand, so some type of tortilla chip is most likely always in the pantry!!! However let’s get to this recipe:

Ingredients:

  • Blue Corn Chips
  • Ground Chicken 1/2 lb
  • Yellow and Orange Bell Pepper 1/4-1/2 cup each diced
  • Onion (1/4 cup) diced
  • Mild Salsa 1/4 cup
  • 1 1/2 -2 cups of Raw Spinach
  • 1/4 cup yellow squash
  • Cumin (1 1/2 tsp)
  • Garlic Salt (1 tsp)
  • Black Pepper (1 tsp)
  • olive oil (1 tbsp)

Instructions:

Take a medium saucepan and turn on medium heat and add olive oil. Next add ground chicken, cumin, garlic salt and pepper and let cook until no longer pink. (Stir Occasionally) Add all vegetables except raw spinach to meat and stir (reduce heat if need). Vegetables should be tender(5-8 minutes). Next add raw spinach and stir and let simmer with chicken and other vegetables (about 5 minutes). Take a bowl and add some blue corn chips and place meat mixture on top of chips. Add salsa and enjoy!!!!!

Note: If you want to omit the chicken, you can and make this a vegetarian meal!!!!

How to make Turkey Meatballs-Tasty Tuesday Tip

Hey everybody!! Today I will show you how I make my moist homemade chicken meatballs!!! This is yet another easy recipe for you to try with your family. You can also use these meatballs in your spaghetti by adding some sauce! So let’s get to the recipe:

Ingredients:

1 lb ground turkey

1 egg

1/2 cup breadcrumbs

1 tbsp Worcestershire sauce

1 tbsp grated parmesan cheese

1/4 cup diced onions

1/4 cup diced green bell pepper

1/4 cup diced red bell pepper

1 tsp salt

1 tsp black pepper

1/2 cup chicken broth

2 tbsp olive oil

Instructions:

In a bowl place ground chicken and add all ingredients to Turkey and mix with your hand until well blended. In a pan..heat olive oil and prepare meat mixture into small to medium sized balls(it will probably not be perfect balls but shape them). Place in pan. Let cook until done and brown.

For gravy..take meatballs out of pan and add about a cup more of chicken broth and stir..making sure get all the flavor from pan. Next get some water and add about 1/4c of flour and stir in a small bowl and add to pan and stir. Add meatballs back to pan and let summer and thicken for about 10 minutes.

Serve over rice or potatoes and enjoy!!!!

Chicken-Vegetables over potatoes

Hey Everybody! I have been extremely busy lately, but did want to whip up a quick & easy recipe. This is something that I made in minutes. I had some chicken tenderloins at home and of course when you have chicken, you can create many different meals. I am always trying to find ways to add more veggies in my meals so I decided to put this one dish meal together. Remember that you don’t have to always use a recipe, just be creative with what you have!!! Let’s get to this recipe:

Ingredients:

  • Chicken Tenderloins
  • 1/2 cup diced zucchini
  • 1/2 cup diced yellow squash
  • 2 cups raw spinach
  • 1 cup salsa
  • 4 small-medium potatoes
  • olive oil (1 tbsp)

Instructions:

I got a medium sauce pan and added about 1 tbsp of olive oil.  Next I added all of my cut vegetables except raw spinach (zucchini, yellow squash). I stirred occasionally to let vegetables get tender. Next I added about 5 chicken tenderloins to vegetables. I seasoned the chicken with pepper, cumin and a little garlic salt. After chicken was done, I removed chicken and shredded and cut into pieces and added back to veggies. Raw Spinach was added and I gave mixture a stir. Finally I added salsa and let simmer for about 10 minutes. Serve mixture over potatoes (slit potatoes open) and enjoy!!!!!

Potatoes:

For a quicker option, I heated my small potatoes(with skin attached) in microwave for about 5 minutes or so until cooked on inside.

Tasty, Tuesday, Tip (Ground Chicken & Vegetable Lettuce Wrap)

Hey Everybody! For today’s Tasty Tuesday Tip I decided to do my own spin on the traditional tortilla wrap. Many times people are trying to find ways to cut calories and watch carbohydrate intake. Here is a very simple idea for you to try. If you are a person that likes to eat wraps or just want to add more veggies in your diet, this would be a great recipe to try that will give you fiber and also cut calories and reduce carbs!! You can make this wrap as colorful as you would like. Remember, to add plenty of color in your meals to obtain variety of nutrients. The other day I was watching a cooking show and the person was not making lettuce wraps, but this idea came to me as I was just looking at what she was making, which I think was a ground chicken type turnover with vegetables and homemade crust. It came to me, “why don’t I just try a lettuce wrap using Romaine Lettuce?” This wrap is filled with “goodness”. Let’s get to the recipe:

Ingredients:

  • 1 15 oz can organic mixed beans(kidney,black and pinto)
  • 1/2 c diced red pepper
  • 1/2 c diced onion
  • 1/2 c diced zucchini
  • 1 cup of spinach
  • 1/2 lb ground chicken
  • 1 tbsp olive oil
  • Romaine Lettuce Head
  • Garlic Powder, Cumin and Salt
  • Salsa

Instructions:

Pour olive oil in a medium sauce pan. Add 1/2 lb of ground chicken and break into pieces as ground chicken cooks. Season with seasonings. Once meat is done, add all vegetables except raw spinach (red pepper, onions, zucchini). Stir and mix into ground chicken and let simmer a few minutes. Next, add beans and stir. Can add a little more seasoning. Let simmer for about 5-7 minutes. Turn heat off and stir in raw spinach.  Take your Romaine Lettuce and pull off one large leaf. (I cut off the end of stem so it would not be so long). Spoon mixture into the lettuce leaf and you can add salsa if desire. Fold leaf over and enjoy! 

**Salsa only contains 10 calories per serving(2 tbsp). It adds a nice taste to your wraps**

1-2-3 Taco Salad

Hey Everybody! Yesterday I decided to make my own version of taco salad. I used what I had on hand at home and made a tasty dish. This was my lunch and it turned out pretty well. I wanted to make sure I added some veggies in this salad. Remember when you are cooking, creativity is important. You don’t have to follow a certain recipe, just follow your creativity!! Most people like to eat tacos and/or taco salads, so I believe this will offer a nice twist. If you are looking for something to prepare for lunch, this can be made a head of time and placed in refrigerator for an easy and quick lunch on the go!!!!! This recipe yields about 2 servings but you can double recipe for more:). Try to keep your foods as colorful as possible! Let’s get to this recipe:

Ingredients:

  • 4 oz ground turkey
  • 1/4 cup diced carrrots
  • 1/4 cup diced red peppers
  • 1/4 cup diced green peppers
  • Fresh Spinach and/or prepackaged salad mix(I had left over spinach so I added it to a ready to eat salad mix)
  • 1/2 c mild salsa
  • ground cumin
  • garlic powder
  • pepper
  • pinch of salt(optional)
  • 1 tbsp olive oil

Instructions:

Add olive oil to a medium sauce pan. Add ground turkey, peppers, carrots and seasonings. Stir occasionally until meat is done and vegetables are tender. Place salad in a bowl or plate. Pour meat mixture on top of salad. Add your salsa and enjoy!!! Can be paired with tortilla chips.

***you can use black beans instead of ground turkey if you want a meatless option***
