Chicken, Bean & Spinach Soup (Mexican Style)


Hey Everybody! You all know that I like to prepare quick & easy meals without too much fuss! I like to be able to put some things together in a pot and you have a nice, healthy meal! Sometimes it can get a little bit challenging, but this meal is very easy and can be on the table in no time. I am a fan of getting a variety of beans and coming up with something tasty. This recipe can be done with or without meat. I chose ground chicken for this recipe. Fall season is upon us, so doing some type of soup type dish is always a winner

You can do this, Remember small steps equals BIG change! Just take a dish you love and change it a bit, and see what you can create. 


What I used for this recipe is as follows: (drained all)

  • 1 can rotel
  • 1 can diced tomatoes (optional)
  • 1 can pinto beans
  • 1 can kidney beans
  • 1/2 lb of ground chicken
  • Handfuls of raw spinach
  • 1 cup of thick n chunky salsa
  • cumin, lite salt and garlic powder

I cooked the ground chicken first in my pot. Next I added all other ingredients to the pot once chicken was thoroughly cooked. Spinach was the last to be added. Note: I actually added spinach earlier than what I normally would have, but try adding spinach to pot during the last 5 minutes of  simmering. Gave a quick stir and put lid on top. Let simmer for about 25 minutes. Enjoy!
