Hey Everybody! I have been extremely busy lately, but did want to whip up a quick & easy recipe. This is something that I made in minutes. I had some chicken tenderloins at home and of course when you have chicken, you can create many different meals. I am always trying to find ways to add more veggies in my meals so I decided to put this one dish meal together. Remember that you don’t have to always use a recipe, just be creative with what you have!!! Let’s get to this recipe:
- Chicken Tenderloins
- 1/2 cup diced zucchini
- 1/2 cup diced yellow squash
- 2 cups raw spinach
- 1 cup salsa
- 4 small-medium potatoes
- olive oil (1 tbsp)
I got a medium sauce pan and added about 1 tbsp of olive oil. Next I added all of my cut vegetables except raw spinach (zucchini, yellow squash). I stirred occasionally to let vegetables get tender. Next I added about 5 chicken tenderloins to vegetables. I seasoned the chicken with pepper, cumin and a little garlic salt. After chicken was done, I removed chicken and shredded and cut into pieces and added back to veggies. Raw Spinach was added and I gave mixture a stir. Finally I added salsa and let simmer for about 10 minutes. Serve mixture over potatoes (slit potatoes open) and enjoy!!!!!
For a quicker option, I heated my small potatoes(with skin attached) in microwave for about 5 minutes or so until cooked on inside.
