Tasty, Tuesday, Tip (Ground Chicken & Vegetable Lettuce Wrap)

Hey Everybody! For today’s Tasty Tuesday Tip I decided to do my own spin on the traditional tortilla wrap. Many times people are trying to find ways to cut calories and watch carbohydrate intake. Here is a very simple idea for you to try. If you are a person that likes to eat wraps or just want to add more veggies in your diet, this would be a great recipe to try that will give you fiber and also cut calories and reduce carbs!! You can make this wrap as colorful as you would like. Remember, to add plenty of color in your meals to obtain variety of nutrients. The other day I was watching a cooking show and the person was not making lettuce wraps, but this idea came to me as I was just looking at what she was making, which I think was a ground chicken type turnover with vegetables and homemade crust. It came to me, “why don’t I just try a lettuce wrap using Romaine Lettuce?” This wrap is filled with “goodness”. Let’s get to the recipe:

Ingredients:

  • 1 15 oz can organic mixed beans(kidney,black and pinto)
  • 1/2 c diced red pepper
  • 1/2 c diced onion
  • 1/2 c diced zucchini
  • 1 cup of spinach
  • 1/2 lb ground chicken
  • 1 tbsp olive oil
  • Romaine Lettuce Head
  • Garlic Powder, Cumin and Salt
  • Salsa

Instructions:

Pour olive oil in a medium sauce pan. Add 1/2 lb of ground chicken and break into pieces as ground chicken cooks. Season with seasonings. Once meat is done, add all vegetables except raw spinach (red pepper, onions, zucchini). Stir and mix into ground chicken and let simmer a few minutes. Next, add beans and stir. Can add a little more seasoning. Let simmer for about 5-7 minutes. Turn heat off and stir in raw spinach.  Take your Romaine Lettuce and pull off one large leaf. (I cut off the end of stem so it would not be so long). Spoon mixture into the lettuce leaf and you can add salsa if desire. Fold leaf over and enjoy! 

**Salsa only contains 10 calories per serving(2 tbsp). It adds a nice taste to your wraps**
