1-2-3 Taco Salad


Hey Everybody! Yesterday I decided to make my own version of taco salad. I used what I had on hand at home and made a tasty dish. This was my lunch and it turned out pretty well. I wanted to make sure I added some veggies in this salad. Remember when you are cooking, creativity is important. You don’t have to follow a certain recipe, just follow your creativity!! Most people like to eat tacos and/or taco salads, so I believe this will offer a nice twist. If you are looking for something to prepare for lunch, this can be made a head of time and placed in refrigerator for an easy and quick lunch on the go!!!!! This recipe yields about 2 servings but you can double recipe for more:). Try to keep your foods as colorful as possible! Let’s get to this recipe:


  • 4 oz ground turkey
  • 1/4 cup diced carrrots
  • 1/4 cup diced red peppers
  • 1/4 cup diced green peppers
  • Fresh Spinach and/or prepackaged salad mix(I had left over spinach so I added it to a ready to eat salad mix)
  • 1/2 c mild salsa
  • ground cumin
  • garlic powder
  • pepper
  • pinch of salt(optional)
  • 1 tbsp olive oil


Add olive oil to a medium sauce pan. Add ground turkey, peppers, carrots and seasonings. Stir occasionally until meat is done and vegetables are tender. Place salad in a bowl or plate. Pour meat mixture on top of salad. Add your salsa and enjoy!!! Can be paired with tortilla chips.


***you can use black beans instead of ground turkey if you want a meatless option***
