Hey Everybody! Today I decided to prepare another simple and easy meal! Remember if you are short on time and need a great meal try this one. It will only take a few ingredients, but it is very tasty. Many people like to eat rice, but you can always add a twist to just the normal side dish. Turn your side dish into your main meal. Remember that small steps equals BIG change. Making small changes in your meals can be healthy and tasty. Let’s get to the recipe.
- 1 3-4 oz chicken breast
- 4 cups of instant whole grain rice
- 1/4 cup diced red pepper
- 1/4 cup diced green pepper
- 1/4 cup diced onions
- 1 cup fresh spinach
- 5 oz fat free cream of chicken (optional)
- olive oil
Prepare rice as directed. While rice is cooking, add oil to a small sauce pan and prepare your chicken breast(season with garlic powder, lite salt, pepper). Cut breast in 1-1/2 in chunks and add to olive oil. Cut all veggies and add at once to the chicken breast in the saucepan. Sauteed all of those ingredients together until chicken is done. Once rice is done, add the chicken and vegetable mixture to the rice and stir. Add cream of chicken and stir(this just adds a little more flavor and creaminess). Enjoy and serve with a salad if you would like!
