Hey Everybody! This is the time of year when it’s cold outside and nothing is better than a good bowl of delicious soup. I like to have beans in some of my soups. They are a good source of protein and fiber!!! I also like the taste of “black beans”. This is another quick and easy soup recipe that your family will love to eat. I came across this recipe in a book and decided to try it for myself. Remember with soups, you can be very creative and try different flavors. This recipe only has a few ingredients with a nice blend. Preparing a meal for your family doesn’t mean you will be in the kitchen for hours. Keep it simple.
If you are a mom and you want to be budget friendly with your meals, soups are a must!!!! Let’s get to this recipe:
- 2-15 oz cans of black beans (drained & rinsed)
- 1 can of diced tomatoes w/green chilies (undrained)
- 2 cups of chicken or vegetable broth
- 1/2 cup of diced onions
- 1 tbsp olive oil
- garlic salt
Add olive oil to your pot and add diced onions. Take 1/2 c of broth and 1 can of black beans and blend in a blender until smooth. (I used my nutribullet) Once done, add mixture to onions and stir. Take other can of black beans and add to pot along with diced tomatoes and green chilies. Season with cumin and garlic salt. (I did not measure seasonings) Bring to boil then simmer!! Enjoy!
