Chicken, Carrot & Potato Soup


Hey Everybody! The other day I was going to make some chicken noodle soup. I guess I have been doing lots of soups lately, but its very easy to prepare. However, I noticed that I didn’t have any noodles! Well..this wasn’t a big problem because I realized that I had POTATOES!!!! I don’t think I ever made a potato based-typed soup. I knew it would be simple and should taste pretty good substituting noodles and using potatoes. Remember that soups are great to make and are budget friendly.  Let’s get to this soup:

What you need:

  • Diced Chicken Breast/Tenderloins
  • Chicken Broth (24 oz)
  • Raw Carrots (Diced in 1/2 in slices)
  • Potatoes(about 6 small potatoes-peeled and diced)
  • 1 can low fat cream of chicken
  • 1/2 c diced onions
  • Italian Seasoning/Lite Salt/Pepper


Cook Chicken (I put my chicken in oven and took out and diced) and set to the side. Got a soup pot and poured chicken broth, diced carrots, potatoes, chicken, onions and seasonings. Let cook for 5 minutes. Add 1 can of cream of chicken. Cover and simmer for until carrots and potatoes are tender. Enjoy!!!!

**You can also add celery to this soup**
